zucchini spirals
with avocado sauce


  • 340g of zucchini spirals
  • 1 avocado
  • 250g (12-1/3 oz.) cream cheese
  • 1 leek, sliced
  • Chives to taste
  • 8 cherry tomatoes
  • 1-piece ginger, grated
  • ground black pepper to taste
  • 1 butter patty
  • Salt to taste
  • mint leaves to taste
  • 1 tsp. lemon juice


Heat the butter in a saucepan with the sliced leek, add the still frozen  zucchini spirals, add salt and cover with a lid and cook over medium heat; once the desired cooking degree has been reached, remove the excess water and add the cream cheese, avocado and a grated ginger; blend well and move the mixture to a serving dish or bowl; cook the cherry tomatoes separately with oil and salt in the still hot saucepan, and add them as a garnish to your finished dish with some mint leaves, grated ginger and a round of chives; add pepper to taste.
