zucchini spirals
with curry
Ingredients
- 340g of zucchini spirals
- 1 cup curry Sauce
- 100g (3.5 oz.) dates or raisins
- 2 tsp. almonds (shelled)
- 1 butter patty
- Salt to taste
- Chives to taste
Preparation
Separately, shell and toast the almonds on a cookie sheet in the oven at 350 degrees for 15 minutes; heat a the butter in a saucepan; add the still frozen zucchini spirals and salt, and cover with a lid; allow the spirals to thaw until the desired degree of cooking is achieved; If necessary, remove the excess water and add a few tablespoons of curry sauce, add the toasted almonds and dates (cut into small cubes), (or substitute raisins); salt and pepper to taste, garnish with chives and some whole dates.
